Jo, Kylie & Mike’s St Chinian Peasant Sausage Stew

As promised, here is the famous sausage stew recipe that we cooked up after buying the ingredients at the market. Drink with copious amounts of wine and you too will experience the flavours, aromas and sunshine of the south of France (if you try really hard!!)

40cm coil of Toulouse sausage preferably bought market fresh (but any good pork sausage will do)
2 x shallots finely chopped
2 x cloves of garlic finely chopped
1 x chopped red pepper
1 x chopped green pepper
1 x chopped leek
2 tbs herbs de provence
1 can tomatoes
¼ cup of wine (we used rose)
¼ cup water
1 can white beans
3 or 4 potatoes
Sliced thick ham – 3 to 4 pieces

Brown coil of sausage gently and put into an earthenware dish. Brown shallots, garlic, peppers and leeks in a pan with salt and pepper and herbs de provence.

Add to sausage with canned tomatoes, white beans, potatoes, ham, wine and water. Stir well and cook for about 1 hr or longer if possible at 180 degrees.

Serve with crusty bread to mop up the juices and a big glass of vino!!!! Voila!
